Green Velvet Cupcakes

Green Velvet Cupcakes

Ingredients
  • ½ cup shortening
  • 1½ cups white sugar
  • 2 eggs
  • 2 tbsp cocoa
  • 4 tbsp green food coloring (or 2 blue + 2 yellow)
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2½ cups sifted all-purpose flour
  • 1½ tsp baking soda
  • 1 tbsp distilled white vinegar
Instructions
  1. Line 2 cupcake trays with cupcake liners.
  2. Preheat oven to 350 degrees.
  3. Cream shortening and sugar well. Add eggs and beat well.
  4. Make a paste of cocoa and food coloring in a separate small bowl.
  5. Add to creamed mixture.
  6. In another bowl, mix salt, vanilla, and buttermilk. Add this mixture and the flour alternatively to the creamed mixture.
  7. In another small bowl, mix baking soda and vinegar, and fold into cake batter (don’t beat or stir!)
  8. Pour batter into cupcake liners (fill each about ⅔.)
  9. Bake for approximately 25 minutes, or until toothpick inserted in the center of the cupcake comes out clean
  10. Frost the cake with homemade or store-bought cream cheese icing.
  11. To make green sprinkles, combine 2-3 tbsp white sugar and a few drops of green food coloring. Mix well, and sprinkle over cupcakes.
