Grandma’s Pizzelle

Putting up this recipe brings a special memory- you know, the “scent-induced” ones….  I can still “smell” grandma’s house when she was cooking these. They were one of her favorite, and she made them quite frequently. Since I grew up eating these tasty treats, I was surprised to know that most people had no idea what I was talking about! So Grandma, this one’s for you!
it is really quite simple! (and I must apologize, Gram- I had to add and clarify some of the instructions~)

Ingredients:

1 Dozen Eggs
3 1/2 Cups Sugar
1/2 Cup Oil
1 Cup Crisco
2 Tbls Lemon Extract
2 Tbls Anise Oil
2 Tbls Baking Powder
1Tsp Cinnamon
10 Cups Flour

Instructions (*edited)

Beat eggs well, and set aside. Sift flour, baking powder and cinnamon in separate bowl, set aside.
Now add to the beaten eggs:  Crisco, oil, sugar and cream well, then add the lemon and anise oil.
Last add the flour mixture slowly (a little at a time) to the creamed eggs & sugar, until well blended.
Make into small balls for heated pizzelle iron

The pizzelles will cook in about 30-40 seconds
Cook until golden (slightly brown).  If you do not cook it enough, it won’t have that crispiness that makes a pizzelle a pizzelle

*option- while still warm from the iron, roll into “cones” (think waffle cones) then you can fill them with ice cream, whip cream & berries, etc…

What is a Pizzelle?

They are traditional Italian treat considered by some to be the oldest known cookie perhaps originating in the Abruzzo region of South-Central Italy. Pizzelle are often used in traditional Italian weddings. Pizzelle are crisp, 5″ round, ultra-thin cookies baked in a waffel iron mold that stamps a flower pattern on top. The cookies are either left plain or dusted with confectioners sugar.These cookies are great anytime. Eaten as they are, with coffee, smothered in ice cream, fresh fruit or your favorite topping.
